Lentil and Quinoa Salad

This is my take on a recipe that I just cant get enough of from Good Food Australia. It’s the perfect make ahead lunch, side dish or a light, easy dinner in its own right- that I hope you love too xo

Ingredients:

1 bunch coriander, chopped

1-2 bunches parsley, chopped

1/2 bunch mint, torn roughly

1 red onion, finely diced

1 cup cooked quinoa

1 can of lentils, drained

2 tbsp toasted slivered almonds

2 tbsp toasted pine nuts

2 tbsp chopped walnuts

1/2 cup currants or raisins

1/2 cup cranberries, goji berries or dried blueberries

Dressing: 1/4 cup Olive oil, juice of 1 lemon, 1 tsp maple syrup, salt & pepper

Toppings: Try some greek yoghurt, cooked chicken, or hummus!

Method:

  1. Mix together all salad ingredients
  2. Dress with lemon juice, maple syrup, olive oil and a little salt and pepper to taste.
