Cauliflower Fried Rice

I love this recipe because it takes like indulgent food but is so quick, easy, nutritious and a great way to use up whichever veg are lurking at the bottom of your fridge or freezer at the end of a week. It can also be easily scaled up or down to serve 1 or more!

You can stick with using regular rice, or opt for cauliflower. I am a fan of buying the frozen packet pre-riced- this way I can whip up a single serve for lunch easily enough but you can also simply grate a whole raw cauliflower if you prefer to DIY.

To add some protein, you could choose to stir fry some beef, chicken, tofu- whatever floats your boat!

Ingredients

  • Cauliflower- riced or pre-prepared frozen cauliflower rice
  • 2 cups of Veggies such as capsicum, carrot, onion, broccoli – finely chopped
  • Frozen veggies such as green peas, edamame, green beans
  • 1/4 cup soy sauce or tamari
  • 2 cloves of minced garlic
  • 2 tsp minced ginger
  • Season with chilli- to taste
  • Optional- 1 whisked egg per serve

Method

  1. Fry the onion, garlic, ginger, chilli for 1-2 mins until the onion is translucent
  2. Add veggies and stir until just cooked.
  3. Add in cauliflower rice or pre-cooked rice. Stir through soy sauce.
  4. Make a space in the pan to add your whisked eggs. Pour in and cook until just starting to harden. Stir through.
  5. Serve!
