Better breads!

These are my top 3 make at home bread recipes- they are gluten and dairy free, and always turn out great.

Store bought gluten free breads often contain additives and chemicals, as well as processed oils and sugars- not to mention a hefty price tag; so making your own is a great alternative. If you have been avoiding making your own bread, now is the time to give it a go and find your favourite!

High Protein Quinoa Bread

My own blood sugar saving Teff bread recipe

·  1 sachet dry yeast

·  1 1/2 cups water about body temp (35 deg Celsius)

·  2 tablespoons honey (or sugar if avoiding FODMAPs)

·  1 cup chickpea flour 

·  ¾ cup almond meal

· 1/4 up plain self raising gluten free white flour

·  1 cup teff flour

·  2 teaspoons xanthan gum

·  1teaspoon fine sea salt

·  3 large eggs at room temperature

·  3 tablespoons olive oil

Toppings or seeds to mix through:

  • 2 tbsp chopped mixed nuts
  • Cinnamon, banana and walnuts for a banana bread style loaf
  • For a Multi-grain loaf: flaxseeds, quinoa, chia seeds

Method

  1. Whisk honey into warm water and add yeast. Let stand for 5 – 8 minutes until yeast has bloomed and is puffy.
  2. Meanwhile, whisk together dry ingredients and add to the bowl of a stand mixer. In a small bowl, beat together eggs and oil.
  3. With the mixer running on low speed, add yeast mixture and let incorporate for a few seconds. Add eggs and almond oil, and mix for 2 minutes. Turn mixer to medium speed, and mix for another minute, adding raw quinoa, and seeds if using.
  4. Line a loaf pan with parchment paper and pour dough inside. Place in a warm, draft-free space in your house and let rise for 30 – 45 minutes until loaf has doubled in size.
  5. Preheat the oven to 180 Degrees. When dough has risen, bake on the center rack for 40 – 50 minutes until loaf is browned and sounds hollow when you tap on it, and a skewer inserted comes out clean.
  6. Remove bread from pan and let cool completely on a wire rack before slicing. Store extra bread in freezer.
