Salmon and Sweet potato cakes

We had a bit of a stockpile of canned foods after my husband went all doomsday prepper on me and filled our basement with canned foods….so I devised some tasty ways to use them up and this recipe was one of them!

Ingredients:

  • 1-2 cans Tinned salmon, drained (also works with tuna)
  • 1/2 cup Almond meal
  • 1 diced onion
  • chopped parsley, half a bunch
  • 2 cloves crushed garlic
  • 100 g Chopped halloumi cheese (teeny tiny hunks is best)
  • 2 eggs
  • 1 tsp paprika
  • 1/4 cup frozen peas, defrosted
  • 1 steamed and cooled sweet potato, mashed (also works with canned taters, as I discovered)

Method:

  1. Mix together all ingredients except almond meal.
  2. Roll into patties, then cover with almond meal to make a crust.
  3. Fry in some coconut oil or butter until gold and crispy on the outside and warmed through.
  4. Serve with some salad, mayo or spiced yoghurt.
