We had a bit of a stockpile of canned foods after my husband went all doomsday prepper on me and filled our basement with canned foods….so I devised some tasty ways to use them up and this recipe was one of them!

Ingredients:
- 1-2 cans Tinned salmon, drained (also works with tuna)
- 1/2 cup Almond meal
- 1 diced onion
- chopped parsley, half a bunch
- 2 cloves crushed garlic
- 100 g Chopped halloumi cheese (teeny tiny hunks is best)
- 2 eggs
- 1 tsp paprika
- 1/4 cup frozen peas, defrosted
- 1 steamed and cooled sweet potato, mashed (also works with canned taters, as I discovered)
Method:
- Mix together all ingredients except almond meal.
- Roll into patties, then cover with almond meal to make a crust.
- Fry in some coconut oil or butter until gold and crispy on the outside and warmed through.
- Serve with some salad, mayo or spiced yoghurt.
