Bun-less lentil and beef burgers

A seven year old dinner party guest once informed me that these were the ‘best burgers ever’- so I can only assume being bun-less doesn’t affect their deliciousness!

They are also packed with extra veg- and no-one can complain about that!

Ingredients:

  • 500g beef mince
  • 1 can of lentils (or another can of lentils if you feel like leaving out the meat)
  • 2 grated carrots
  • 1 red onion diced
  • 4 eggs
  • 3 tbsp almond meal or plain flour
  • salt & pepper to season
  • Salad to serve. We love pineapple, tomato, cos lettuce and tomato chutney!

Method:

  1. Pre-heat the oven to 180 degrees celsius.
  2. Whisk the eggs lightly.
  3. Mix together the remaining burger ingredients.
  4. Shape burger mince into approx 8-10 patties.
  5. Bake on a lined tray for approx 20 mins, turning once if preferred.
  6. Serve stacked with salad and optional cheese and sauces!

Also great served with homemade sweet potato fries- delish! xo
