Creamy cashew carbonara

Ingredients:

  • 1/2 cup cashews, soaked and drained
  • 1/2 cup vegetable stock
  • 1 cup defrosted frozen/canned green peas
  • 1 cup chopped button mushrooms
  • 1/2 onion, diced
  • 1 tbsp nutritional yeast or 1/4 cup grated parmesan cheese
  • 1 tsp minced garlic
  • Pasta of your choice (my favourite is chickpea pasta spirals!)

Method:

  • Blend together soaked cashews, stock, nutritional yeast.
  • Brown onion, garlic and mushrooms in some oil or butter.
  • Stir through peas, stock, cashew cream sauce until heated.
  • Meanwhile cook pasta according to instructions.
  • Mix together pasta and sauce. Enjoy!

Optional: serve with cooked chicken breast.
