
Ingredients:
- 1/2 cup cashews, soaked and drained
- 1/2 cup vegetable stock
- 1 cup defrosted frozen/canned green peas
- 1 cup chopped button mushrooms
- 1/2 onion, diced
- 1 tbsp nutritional yeast or 1/4 cup grated parmesan cheese
- 1 tsp minced garlic
- Pasta of your choice (my favourite is chickpea pasta spirals!)
Method:
- Blend together soaked cashews, stock, nutritional yeast.
- Brown onion, garlic and mushrooms in some oil or butter.
- Stir through peas, stock, cashew cream sauce until heated.
- Meanwhile cook pasta according to instructions.
- Mix together pasta and sauce. Enjoy!
Optional: serve with cooked chicken breast.
